  1. Preheat your oven to 180°C (fan-assisted).                                                                 
  2. Place the tomatoes, red pepper, courgette, and red onion in a deep baking tray.                                                                                                                      
  3. Sprinkle over the herbs and add the tablespoon of olive oil. Mix well.               
  4. Cook for around 20 minutes or until soft and tender.                                                        
  5. Meanwhile, heat the remaining olive oil in a pan and gently fry the grated  carrots on a medium heat for 5-6 minutes. Set aside.                                                   
  6. Combine all the ingredients in a food processor and blend until smooth.                       
  7. Stir the sauce into cooked pasta (fusilli works best as the sauce clings so well to it).                                                                                                                            
  8. Any leftover sauce can be frozen (try freezing in ice cube trays for perfect baby-sized portions).
